Bring all ingredients except milk to room temperature.
Separate the egg whites and yolks and place them in two separate bowls. Be careful not to mix them at this stage.
Add granulated sugar to the egg yolks and beat well. Add the milk and mix.
Sift vanilla, flour and baking powder onto the egg yolks that you have whisked with sugar. Mix all the ingredients well with a spatula.
Add salt to the egg whites and beat well with a mixer or wire whisk until they double in size.
Add the doubled egg whites to the egg yolk mixture in three additions and fold in from bottom to top with a spatula without deflating.
