Beat the eggs and sugar until it reaches a paste consistency. Add vanilla and coconut to the mixture little by little and mix until it becomes a dough. At this stage, you can reduce the amount of coconut by 100 grams and obtain flatter and softer cookies.
Let the mixture you have prepared rest in the refrigerator for 15-20 minutes so that it can be shaped easily. Using an ice cream scoop, spice shaker, soup spoon or similar tool, take pieces of the mixture and press them into the cookies on a baking tray covered with wax paper.
Bake the cookies in a preheated fan oven at 160 degrees for 15-20 minutes. When your baking time is halfway through, you can turn the tray 180 degrees to ensure even baking. After removing the cookies from the oven, cool them to room temperature.
