In a deep bowl, mix boiled, mashed potatoes, melted butter, eggs, salt, dried mint and yogurt.
Lay one sheet of yufka on the counter, spread the potato mixture on it, add the white cheese pieces on it and spread the second sheet of yufka, spread the potato mixture again and repeat the same process for the last layer.
Roll the stacked sheets of dough tightly and wrap them. Remove any excess from the edges, wrap in cling film and place in the freezer. Leave in the freezer for about 1.5 hours so that it can be easily sliced.
When the pastry is slightly frozen, slice it into 2-3 cm thick slices using a sharp knife.
Arrange the slices on baking paper and bake in a preheated oven at 200 degrees for about 25 minutes until golden brown and crispy.
