Pour water into a deep bowl. Add the sourdough that you started feeding the day before. Mix your yeast and water well.
Sift the flour and salt twice, make a well in the middle and add the sourdough mixture.
Start kneading slowly. You will obtain a sticky, runny dough. Once you have the dough, cover it and let it sit for half an hour.
At the end of half an hour, do your first folding process. After the first folding, wait for another half hour. Fold a total of 5 times at half hour intervals.
After the folding process, sprinkle plenty of flour into a pot and place a cloth in it. Flour it abundantly as well, place the dough inside and close the lid.
Place a bowl filled with hot water in the oven and let your dough rest for another hour.
Preferably, line a cast iron baking dish with baking paper. Place the dough you left to rise, shape it and close the lid. Start heating your oven to 200 degrees. Keep a bowl full of water inside your oven.
When your oven is heated, put your bread in the oven. Bake for 40 minutes with the lid closed and 20 minutes with the lid open. Enjoy it when it's cooked.
