We wanted to benefit from the power of these vegetables, so we prepared a recipe with vegetables and chicken that is both light and looks like a rainbow. We left the video here, enjoy your meal!
Mix the crushed garlic, olive oil, grated lime zest and all the spices in a bowl.
Set aside to pour over vegetables and chicken.
Boil the chicken in a pot with clean water and set aside after cooking. Do not drain the water.
Place cherry tomatoes vertically in a large glass dish.
Arrange the diagonally cut carrots next to the cherry tomatoes.
Cut the baby potatoes in half or quarters, depending on their size, and place them next to the carrots.
Place the boiled chicken next to the potatoes.
Remove the seeds from the village peppers, cut them lengthwise and place them next to the chicken.
Slice the red onions thinly, but not too thinly, and arrange them next to the peppers.
Pour the sauce you prepared above over the vegetables and chicken in the baking dish using a spoon.
Add 2 ladles of the previously boiled chicken broth to the glass dish.
Bake in the oven at 190 degrees for 40 minutes.
Divide among plates and serve.
